3 c thinly sliced unpared zucchini (about 4 small) 1 c Bisquick baking mix (pref Heart Smart) ½ c grated Parmesan cheese ½ c finely chopped onion (pref RED) 2T snipped parsley ½ t salt ½ t seasoned salt ½ t dried marjoram or oregano leaves (oregano) Dash of Pepper 1 clove garlic, finely chopped ½ c vegetable oil 4 eggs, slightly beaten
Heat oven to 350. Grease rectangular pan (13x9x2”). Mix all ingredients; spread in pan. Bake until golden brown, about 25 mins. Cut into rectangles about 2x1 inch. Refrigerate any remaining appetizers.
